Whole Grains for Breakfast

September is Whole Grains Month, and breakfast is the perfect time to fill up on healthy whole grains. Start your day with one of these delicious high fiber dishes.

Whole Grain Breakfast Burritos

The combination of vegetables and whole grains gives you a healthy helping of fiber in each serving.

6 whole-wheat flour tortillas
1/4 c crumbled bacon (We use bacon, since the flavor is strong enough that you can use a small amount. You can use chopped ham or crumbled cooked sausage if you prefer.)
8 eggs, beaten
1/4 c frozen hash brown or O’Brien potatoes
1 green onion, thinly sliced
1/4 cup diced red bell pepper
1/4 cup diced tomato
1/4 c diced avocado
1/2 c shredded Mexican cheese blend
1 tablespoon fresh chopped cilantro

Warm the tortillas while you cook the meat. Combine meat, eggs, and cheese and pour the mixture into a pan. Scramble the mixture and stir in the vegetables. Roll the mixture in the tortillas and fold in the ends. Lay the burritos in a baking pan and bake at 350 degrees for 20 minutes. Serve with hot sauce and plain yogurt.

Whole Grain Fruit Crisp

We didn’t peel the fruit and we added nuts. Both these choices, along with the whole wheat flour, increase the fiber content of this sweet and nutritious treat.

2 apples, sliced
2 ripe pears, sliced
2 c Fresh or frozen cherries
1/2 c butter, softened
1/2 c brown sugar
1 c almond meal
2 c rolled oats
1 c. chopped pecans
1/2 c whole wheat flour
1 T cinnamon

Lay the fruit in a baking dish. Cream the butter and sugar. Mix in the remaining ingredients and crumble the mixture over the fruit. Bake at 350 degrees for 30 minutes.

Raspberry Lemon Muffins

1 c whole wheat flour or white whole wheat flour
1 c rolled oats
2 t baking soda
1 t baking powder
1/2 c sugar
2 T lemon juice
2 T lemon zest
1 egg, beaten
1/2 c lemon yogurt
1/3 c oil
1 c raspberries

Mix together the dry ingredients. Stir in the egg, yogurt, oil, and berries. Fill greased muffin cups 3/4 full and bake at 350 degrees for 20 minutes, or till a knife pushed into the center of one muffin comes out clean.
